RAINBOW SMOOTHIES THE WHOLE FAMILY WILL LOVE

I've been sharing some of our after-school snack ideas over on Instagram, and it was so fun to create a rainbow smoothie series with the help of my four kids.  I love smoothies because they're a great way to hide fruits and veggies that my kids won't usually eat on their own.

6 Rainbow Smoothie Recipes Healthy Kid Smoothies

In this series, I knew I wanted each smoothie to be nutritious, simple and delicious using ingredients that are usually in my pantry and fridge.  I also wanted to add a "hidden" and unexpected veggie in each smoothie.  It was fun to get creative with the different colors and I have to say that my kids (and I) loved each one of these and we'll definitely be making them on repeat this summer.

Each recipe makes about 40 oz (4 10-oz servings).

RED RAINBOW SMOOTHIE

 

Kids Red Rainbow Healthy Smoothie - 2 cups apple juice
- 1 cup frozen strawberries
- 1 cup frozen raspberries
- 1 apple
- 1/4 cup raw beet
- 1 cup ice
Blend all ingredients until smooth.

 

ORANGE RAINBOW SMOOTHIE

Kids Healthy Orange Rainbow Smoothie - 1 1/2 cups orange juice
- Zest from 1 orange
- 3 oranges
- 5.3 oz vanilla Greek yogurt
- 1/2 cup sweet potato
- 1/4 cup carrot
- 2 cups ice
Peel sweet potato and carrot. Dice and place in a microwave-safe dish. Cover with water and microwave for about 2 minutes, until tender. Drain and cool. Zest one of the oranges into blender, peel oranges and add remaining ingredients.  Blend until smooth.

 

YELLOW RAINBOW SMOOTHIE

Kids Healthy Yellow Rainbow Smoothie - 2 cups water
- 2 bananas, chopped
- 2 cups frozen pineapple
- 1 cup frozen mango
- 1 tsp lemon zest
- 1 cup cauliflower
Dice cauliflower and place in a microwave-safe dish. Cover with water and microwave for about 2 minutes, until tender. Drain and cool. Combine all ingredients in blender. Blend until smooth.

 

GREEN RAINBOW SMOOTHIE

Kids Healthy Green Rainbow Smoothie - 2 cups limeade
- 4 kiwis, peeled and chopped
- 1 cup frozen green grapes
- 1 cup frozen pineapple
- 2 cups frozen spinach
- 1/2 avocado
Combine ingredients in blender. Blend until smooth.

 

BLUE RAINBOW SMOOTHIE

Kids Healthy Blue Rainbow Smoothie - 2 1/2 cups milk
- 12 oz frozen blueberries
- 1 cup vanilla Greek yogurt
- 1/2 avocado
Combine ingredients in blender. Blend until smooth.

 

PURPLE RAINBOW SMOOTHIE

Kids Healthy Purple Rainbow Smoothie - 2 cups wild berry juice
- 2 cups frozen berries
- 1 cup plain Greek yogurt
- 1 frozen banana
- 1/2 cup purple cabbage
- Drizzle honey (optional)
Combine ingredients in blender. Blend until smooth.
